Lemon Brownies
These lemon brownies are soft, moist, and bursting with bright lemon flavor, and they finish with a sweet lemon glaze that makes every bite taste like sunshine. If you love citrus desserts but want something richer than a lemon bar, start here.
What makes them special is the melted white chocolate in the batter. It gives the bars a fudgy, rich texture while keeping them delicately soft, somewhere between a brownie and a cake. That is why they never taste dry or crumbly.
The glaze does more than look pretty. Made from powdered sugar and fresh lemon juice, it soaks into the top of the brownies as it sets, which keeps them moist and adds a zesty sweetness that balances the tang in the batter.
One quick note on lemon flavor: rub the lemon zest into the sugar with your fingertips before anything else goes into the bowl. That small step releases the natural oils in the zest, and those oils carry far more lemon flavor than juice alone. You will taste the difference in the very first bite.
The best part is how simple this is. No mixer, just a few bowls and a whisk. If you can melt butter, whisk eggs, and fold flour, you can make these brownies.

One 8×8 inch pan, one large bowl for the batter, one small bowl for the glaze, and about 25 to 30 minutes in the oven.
The pan cuts into 9 brownies, which is just right for a small crowd or a week of after dinner treats.

Table Talk with Tawnie
A lemon brownie is a citrusy relative of the classic chocolate brownie. It looks a lot like a lemon blondie, and it shares that soft, chewy character, but the melted white chocolate gives it a fudgy richness a plain blondie cannot match.
It is also very different from a traditional lemon bar. Lemon bars have a shortbread crust and a custardy filling, while these brownies skip the crust completely. Lemon flavor runs through the whole bar, and the texture stays soft and chewy from edge to center.

This recipe comes from Tawnie at Kroll’s Korner, where the lemon meets white chocolate and a simple two ingredient glaze. If you want the classic chocolate version for comparison, my Homemade Cosmic Brownies are a good place to look.
Ingredient Notes
These brownies use everyday baking ingredients, but a few choices matter more than you might expect. Here is what goes into the batter.

| Ingredient | Amount | Why it matters |
|---|---|---|
| Unsalted butter | 1/2 cup | Melts with the chocolate and keeps the bars rich. |
| White chocolate bar | 1 bar, 4 oz. | Use a good quality bar rather than chips for flavor and a creamy melt. |
| Granulated sugar | 3/4 cup | Sweetens the batter and balances the tart lemon. |
| Lemon zest | 2 Tbsp., from about 2 large lemons | The main source of fresh citrus flavor. |
| Eggs | 2 large, room temperature | Add structure and moisture. |
| Egg yolk | 1 large, room temperature | An extra yolk means a softer, chewier bite. |
| Lemon extract | 1 tsp. | Boosts the brightness of the fresh lemon. |
| Vanilla extract | 1 tsp. | Adds warmth so the lemon does not taste sharp. |
| All purpose flour | 1 cup plus 2 Tbsp., spooned and leveled | Builds the structure of the bar, so measure it carefully. |
| Salt | 1/2 tsp. | Keeps the sweetness in check. |
| Baking powder | 1/8 tsp. | Adds a small amount of lift. |
| Fresh lemon juice | 2 Tbsp. | Adds tang to the batter. |
For the glaze you need just two things: 1 cup of powdered sugar and 2 Tbsp. of fresh lemon juice. Nothing else, and no cooking.

A few notes before you start mixing:
- White chocolate bar, not chips. A good quality bar melts smoother and tastes better. This recipe calls for one 4 oz. bar.
- Fresh lemon, always. Bottled juice will not give you the same brightness, and you need the zest anyway.
- Zest with a microplane. Stop before you reach the white pith under the yellow skin. The pith is bitter and will fight the flavor you are trying to build.
- Room temperature eggs. They blend into the batter more evenly than cold eggs straight from the refrigerator.
- Two extracts, not one. Lemon extract sharpens the citrus while vanilla extract softens it.
Step by Step Directions
The complete recipe is in the recipe card further down the page.

The short version: melt, zest, whisk, fold, bake, glaze. Each step below explains what to do and what to watch for along the way.
Melt butter and chocolate
Place the butter and the white chocolate in a microwave safe bowl. Cover it loosely with a paper towel to catch any splatter, microwave for 1 minute, then stir.

Continue in 15 to 30 second bursts, stirring between each one, until the mixture is melted and smooth but not scorched. Take it out and let it cool slightly before it meets the eggs.
Create lemon sugar
Add the granulated sugar and the lemon zest to a large mixing bowl. Rub them together with your fingertips until the sugar feels a little damp and smells strongly of lemon. That is your lemon sugar.

This rubbing step releases the natural oils inside the zest, and those oils spread lemon flavor through every bite of the batter. It takes a minute, and it is worth every second.
Combine ingredients
Whisk the eggs, the extra yolk, the lemon extract, and the vanilla extract into the lemon sugar for about 1 minute. Pour in the melted butter and white chocolate mixture and fold until it is combined.
Add the flour, salt, and baking powder and fold a few times, then add the lemon juice last. Fold just until everything is incorporated. Do not overmix.

If you want even more richness, fold in a handful of white chocolate chips at this point.
Bake
Pour the batter into the lined 8×8 inch pan and spread it into an even layer. Bake at 350°F for about 25 to 30 minutes.

The edges will look golden brown while the top stays pale, and a toothpick inserted in the center should come out mostly clean with a few moist crumbs clinging to it. Let the brownies cool completely in the pan before glazing.
Glaze & enjoy!
Whisk 1 cup of powdered sugar with 2 Tbsp. of fresh lemon juice in a small bowl. The glaze should be thick but still pourable.
Spread it over the cooled brownies with an offset spatula, then scatter a little extra lemon zest on top if you like. Let the glaze set for about 15 to 30 minutes before you slice and serve.
Expert Tips
A few small habits separate a good lemon brownie from a great one. None of them are complicated.
- Spoon the flour, then level it. Spoon flour into the measuring cup and level the top with the back of a knife. Scooping straight from the bag or canister can pack in up to 50 percent more flour than the recipe needs, and too much flour means a dry, dense bar.
- Stop mixing early. Once the dry ingredients meet the wet, fold only until you can no longer see streaks of flour. Overmixing develops gluten, and gluten makes these bars tough instead of tender.
- Pull them from the oven on time. Bake just until the edges are set and a toothpick in the center comes out with a few moist crumbs. Overbaking dries them out. Remember that they keep cooking a little in the hot pan as they cool.
- Reach for a light colored pan. A light colored aluminized steel pan gives a lighter, more tender crust. Dark metal absorbs more heat and can create a darker, thicker crust. This recipe has not been tested in glass, but if you use a glass pan, expect it to need more baking time.
- Go slow with the white chocolate. Short microwave bursts with stirring in between keep it silky. Push it too far and it scorches.
- Measure the zest by lemon, not by guess. Two large lemons should give you the 2 Tbsp. the recipe calls for.
The easiest upgrade in this whole recipe: rub the zest into the sugar before anything else touches the bowl.
Storage / Freezing
Once the glaze has set and the brownies are completely cool, cut them into squares. Stored in an airtight container or a resealable bag at room temperature, they stay fresh for 2 to 3 days.
For longer storage, move them to an airtight container in the refrigerator, where they keep for up to 1 week. Chilled is a great way to eat these. The texture turns even fudgier in the cold, and the lemon flavor stays bright.

To freeze, wrap individual brownies tightly or place them in a freezer safe container. They hold for up to 2 to 3 months. Thaw at room temperature before serving.
