  • Total Time: 30 min
  • Yield: 4 1x

Ingredients

Scale

2 large chicken breasts
1 teaspoon seasoned salt
1/2 teaspoon black pepper
1 tablespoon butter
1 medium onion, sliced 1/4-inch thick
1/2 pound button mushrooms, sliced
1/4 pound Monterey Jack cheese, shredded
salt

Instructions

1-Prepare the chicken: Prepare the chicken: Slice each chicken breast horizontally to create two thinner pieces. Place the chicken pieces between plastic wrap and pound to an even thickness using a meat mallet. Season both sides of the chicken with seasoned salt and black pepper.
2-Saute the vegetables: Saute the vegetables: Melt 1 tablespoon of butter in a skillet over medium-low heat. Add the sliced onions and a pinch of salt. Saute for 3-4 minutes until softened. Stir in the sliced mushrooms and cook for another 3-4 minutes until browned. Remove the onions and mushrooms from the skillet and set aside.
3-Cook the chicken: Cook the chicken: Add more butter to the skillet if needed. Increase the heat to medium. Place the seasoned chicken breasts in the skillet and cook for 6-8 minutes on the first side until golden brown. Flip the chicken and cook for an additional 3-4 minutes, or until fully cooked (internal temperature reaches 165ยฐF/74ยฐC).
4-Assemble the dish: Assemble the dish: Reduce the heat to low. Top each chicken breast with the sauteed onions and mushrooms. Sprinkle the shredded Monterey Jack cheese evenly over the top. Cover the skillet with a lid and let the cheese melt for 1-2 minutes.
5-Serve: Serve: Remove the smothered chicken from the skillet and serve immediately. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
