Why You’ll Love These Loaded Mashed Potato Bites If you have extra mashed potatoes in the fridge, turn them into these golden, cheesy bites for a snack everyone will grab. These loaded mashed potato bites pack everything you love about a loaded baked potato into a poppable, dippable appetizer.

  • Total Time: 25 minutes
  • Yield: 6 1x

Ingredients

Scale

2 cups mashed potatoes, cooled
1 cup shredded cheddar cheese
4 slices cooked bacon, crumbled
2 tablespoons chopped chives or green onions
½ teaspoon garlic powder
¼ teaspoon black pepper
¼ teaspoon salt, adjust to taste
1 large egg
½ cup all-purpose flour
1 cup breadcrumbs, plain or seasoned
Oil for frying, vegetable or canola

Instructions

1-Mix Filling: Mix Filling: In a large bowl, combine mashed potatoes, cheddar cheese, bacon, chives, garlic powder, pepper, and salt. Mix in the egg until the mixture is well blended.
2-Shape Bites: Shape Bites: Scoop out about 1 tablespoon of the mixture and roll into balls. If the mixture is too soft to hold its shape, chill it in the fridge for 15-20 minutes.
3-Coat: Coat: Roll each potato ball in flour, then coat with breadcrumbs. For a crispier texture, double dip: flour → beaten egg → breadcrumbs.
4-Fry: Fry: Heat about 2 inches of oil in a deep pan over medium heat (around 350°F / 175°C). Fry the potato bites in batches until golden and crispy-about 2-3 minutes per side.
5-Drain: Drain: Transfer bites to a paper towel-lined plate to remove excess oil.
6-Serve: Serve: Serve hot with sour cream, ranch, or your favorite dipping sauce.
