1-First Step: Gather and prep everything
Set out the focaccia, basil pesto, mortadella or ham, salami, sliced fresh mozzarella, roasted pepper, and arugula. If your pesto is homemade, give it a quick stir so it spreads smoothly. Drain the roasted pepper well so extra liquid does not soak the bread.
2-Second Step: Split the focaccia
Use a sharp bread knife to split the focaccia in half lengthwise. Try to keep both halves even so the sandwich stacks neatly. If the bread is extra soft, slice slowly so you do not tear the crumb.
3-Third Step: Spread the pesto
Spread basil pesto on each slice of focaccia. For the best flavor, coat both the top and bottom pieces. This gives you that bold basil taste in every bite and also helps form a little moisture barrier between the bread and the fillings.
4-Fourth Step: Layer the fillings
