๐ŸŒ๐Ÿฅ– Incredibly moist banana bread with tender crumb, natural sweetness, and no dry texture โ€“ ultimate comfort bake!
โญ Uses overripe bananas for max flavor; one-bowl ease perfect for breakfast, snacks, or gifting.

  • Total Time: 1 hour 10 minutes
  • Yield: 1 loaf (10 slices)

Ingredients

– 3 ripe bananas (about 1.5 cups)

– 2 eggs

– 1/2 cup melted butter

– 3/4 cup sugar

– 1 tsp vanilla extract

– 1.5 cups flour

– 1 tsp baking soda

– 1/4 tsp salt

Instructions

1-First Step: Begin by preheating your oven to 350ยฐF (175ยฐC). It is crucial that the oven is fully heated before the batter goes in to ensure proper rising. While the oven heats up, prepare your 9×5-inch loaf pan. You can grease it thoroughly with butter or cooking spray, or for easy removal, line the bottom with parchment paper and grease the sides. This prevents the bread from sticking and makes cleanup a breeze.

2-Second Step: Gather your bananas. For the best results, they should be overripe with plenty of brown spots or even black skins. Peel the bananas and place them in a large mixing bowl. Use a fork or a potato masher to mash them until they are smooth with only small lumps remaining. The consistency should be like a thick puree. If you have a stand mixer, you can use the paddle attachment for this step, but a fork works perfectly well for a rustic texture.

3-Third Step: In a separate medium bowl, crack the 2 eggs and beat them lightly. Add the 1/2 cup of melted butter to the eggs. Make sure the butter has cooled slightly so it does not cook the eggs. Pour in the 3/4 cup of sugar and the 1 tsp of vanilla extract. Whisk these wet ingredients together until the sugar is mostly dissolved and the mixture is well combined. Then, pour this egg mixture over the mashed bananas in the large bowl. Stir everything together until the bananas are fully incorporated into the liquid mixture.

4-Fourth Step: In another clean bowl, sift together the dry ingredients. This helps to aerate the flour and remove any lumps. Combine the 1.5 cups of flour, 1 tsp of baking soda, and 1/4 tsp of salt. Whisk them gently to ensure they are evenly distributed. Slowly add the dry ingredients to the wet banana mixture. Using a spatula or wooden spoon, fold the dry ingredients into the wet mixture. Be very careful not to overmix. Stop as soon as you no longer see streaks of white flour. Overmixing develops gluten, which can make the bread tough and chewy rather than tender.

5-Fifth Step: Once the batter is just mixed, pour it into your prepared loaf pan. Use the spatula to spread the batter evenly, ensuring it reaches all corners of the pan. Tap the pan gently on the counter once or twice to release any large air bubbles. If desired, you can slice an extra banana lengthwise and place it on top of the batter for a decorative look, or sprinkle some coarse sugar on top for a crunchy crust.

6-Sixth Step: Place the pan in the center of the preheated oven. Bake for 55 to 65 minutes. Baking times can vary depending on your oven and the exact moisture content of your bananas, so start checking at the 55-minute mark. Insert a wooden toothpick into the center of the loaf. If it comes out clean or with just a few moist crumbs, the bread is done. If there is wet batter on the toothpick, give it a few more minutes. If the top is browning too quickly, you can loosely tent a piece of aluminum foil over the pan for the last 10-15 minutes.

7-Final Step: Remove the pan from the oven and set it on a wire rack. Allow the banana bread to cool in the pan for about 10 minutes. This cooling period helps the bread set and makes it easier to remove without breaking. After 10 minutes, carefully run a knife around the edges to loosen it, then turn the loaf out onto the wire rack to cool completely. Wait until the bread is fully cool before slicing. This ensures the texture sets perfectly and prevents the slices from becoming gummy.
