Ingredients
– 2 pounds boneless skinless chicken breasts cut into 1-inch cubes
– 1 tablespoon extra virgin olive oil
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon kosher salt
– 1/2 teaspoon black pepper
– 1 1/4 cups mayonnaise
– 2/3 cup Thai sweet chili sauce
– 2 teaspoons Sriracha (or more to taste)
– 2 tablespoons honey
Instructions
1-First Step: Season the chicken Place the cubed chicken breasts in a large bowl. Add the olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss well until every piece is coated.
2-Second Step: Thread the chicken onto skewers Take the soaked wooden skewers and thread the chicken cubes on carefully, leaving a little space between each piece. Do not pack them too tightly, or they will steam instead of browning nicely.
3-Third Step: Choose your cooking method You can grill, bake, or air fry these Bang Bang Chicken Skewers depending on what works best for your kitchen. For grilling, cook over medium-high heat for about 3 to 4 minutes per side until the chicken reaches 165ยฐF. For baking, place the skewers on a lined sheet pan and cook at 425ยฐF for about 15 to 18 minutes, turning once halfway through. For air frying, cook at 400ยฐF for about 10 to 12 minutes, flipping once.
4-Fourth Step: Make the Bang Bang sauce While the chicken cooks, whisk together the mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a medium bowl. Taste the sauce and adjust the spice level if needed. If you love extra heat, add more Sriracha. If you want a sweeter finish, add a small drizzle more honey.
5-Fifth Step: Coat the skewers and finish Once the chicken is cooked through, transfer the skewers to a plate or serving platter. Brush the sauce over the chicken or drizzle it generously on top. For a bigger flavor hit, toss the skewers in a bowl with some of the sauce, then add more on the side for serving.
6-Final Step: Serve right away Serve the skewers while they are hot and glossy. A sprinkle of chopped green onions or sesame seeds would be nice, but the recipe works well even without extra garnish. The chicken should be tender, the sauce creamy, and the whole dish ready to enjoy in about 30 minutes.
